*chunky monkey* buckwheat pancakes + fall-ticipation

I’m officially in fall cooking mode! You see, I’ve always thought of August as non-month because of my intense love for the fall. It’s really a fab month to get excited for all the goodness that September and October brings. And I can totally embrace that. Getting geared up is one of my favorite things to do — think of the joys of watching and re-watching awesome movie trailers for months before the movie comes out!

Don’t fret, August. I still seriously love you for your luscious summer produce! ♥ This week, I even plan to share the most mouth-watering summer sandwich idea ever. Just you wait!

A few other friends and I have been swooning over the mere thought of fall fashion, layering and the fabulous, delicious crisp weather. Pure heaven. So, don’t be freaked out if I start talking about pumpkin pie and chunky sweaters soon. Because I’m so ready. And … the magazines. The big, fat 5 pound September magazines headed our way in a couple weeks. Drool.

Ever since finishing Friday’s post, I’ve had buckwheat pancakes on the mind. Once something is stuck in my head, I usually have to move forward with it, whatever it is (except for the yacht). If it’s clothes or products, I have to buy them. Even if that means a return a few days later. I woke up Sunday morning needing to cook scrumptious pancakes. I had an overripe banana and I always have chocolate chips. And a few walnuts makes it chunky monkey style!

I’ve also recently learned that Buckwheat is pretty amazing. Check this out! Indigenous to Central Asia, this plant is a nutrition powerhouse! Despite its name, buckwheat is not wheat—it’s a cousin of rhubarb and contains 1,000 mg antioxidant rutin per 100 grams. Rutin is known to protect against free radical damage. (source) Wow.

The bananas and chocolate made these so moist that they didn’t need butter or syrup. I ate the first few without anything. But, butter just looks so pretty melting all over the ‘cake, right?

The color of the ‘cakes comes from the rich color of the buckwheat flour, rather than the completely chocolate batter that they actually look like! Kind of looks like I went wild with the chocolate, no?

*chunky monkey* buckwheat pancakes
adapted from this base recipe

{the goods!}
1 cup buckwheat flour (I used organic Arrowhead Mills)
1 tsp baking powder
2 tbsp organic cane sugar (or white or sugar in the raw)
1/2 tsp salt
cinnamon, couple dashes
nutmeg, couple dashes
1 egg, beaten
1 cup almond milk (or any preferred milk)
2 tbsp extra virgin olive oil
1 tsp bourbon vanilla extract
1/2 ripe banana sliced very thin, almost shredded
1/4 cup semi sweet chocolate chips
1/4 cup raw walnuts, chopped or broken into small bits
Sliced cold butter, for cooking (or olive oil or cooking spray)

{do it up!}
In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, cinnamon and nutmeg. In a separate medium bowl, beat the egg well, then add the milk, olive oil, and vanilla and whisk all together.

Add the wet ingredients to the dry ingredients and whisk together until everything is combined into a smooth batter. Gently fold in the sliced bananas, chocolate chips and walnuts until just combined.

Heat a large skillet to medium-low to medium, depending on the strength of your stove top. Melt 1-2 slices of butter in heated pan. Add 1/4 cup batter for each pancake in heated skillet. Cook 1 to 1½ minutes on one side and turn when edges begin to bubble and top begins to slightly firm up. Continue to cook 1 to 1½ minutes on the other side or until golden brown. Serve immediately.

Bonus Chunky Monkey Style: Add whipped cream for a rich, indulgent touch!

If you’re really short on time, the base recipe I adapted this from is truly quick. You could just throw in some chocolate chips to spice it up. Sometimes, when I’m really tired, I need a quick solution and that is a great quickie breakfast. But, if you have the time, all the added ingredients in this version are fun! :)

  1. Your gym workout must be really intense for you to be able to eat all the wonderful things you post! Totally worth it though, right? :-)

    1. Sometimes it is and sometimes not! These ‘cakes are not all that bad for you. The worst thing is the butter I cooked them in! But they are delicious and worth it! :)
