Spring is right around the corner. Can you feel it? I feel spoiled to have had such a lovely mild winter and have loved every warm minute of it. But, I’m ready for the official season to begin. My bod, on the other hand, is ready for summer and has totally switched to summer food mode. Smoothies, healthy snacks, bright salads and loads of fresh fruit!
One of my favorite new snacks is hard boiled eggs + hummus. You know I love eggs, as seen here, here and here. And, I could literally eat hummus for dinner every night and be happy. But, I had never thought of combining the two until now. I found this recipe through a Natalie Jill resource and was so excited for a new twist on two things I absolutely adore.
spicy hard boiled eggs + hummus!
♦ six hard boiled eggs, recipe here
♦ hummus [I love Trader Joe’s organic original hummus]
♦ cayenne pepper
Cut the cooled, hard-boiled eggs in half and discard the yolks. Fill with a dollop of hummus. Sprinkle with cayenne pepper to add the *spicy* to this snack.
Mix it up:
♥ Try using flavored hummus, like roasted red pepper or garlic.
♥ Try other spices like chili powder, paprika, curry powder, or any other spice you love.
♥ For a richer flavor, keep a couple yolks and blend well with the hummus with a fork in a small bowl for the filling.
