After traveling for a few days and indulging in everything in my path, I always crave vegetables and whole grains. This deliciousness is the cure for any post-vacay healthy food craving. And the little bursts of bright colors will definitely cheer you up!
It’s crunchy, sweet, warm in flavor, colorful and satisfying!
Quinoa is a fab staple pantry item to have, especially during the cold months. It’s super easy to make when you want a quick, nutritious dinner. If you are really low on time, add in some garlic and organic, canned white beans, salt + pepper and you have a 20 minute meal!
I love the brightness of red + yellow peppers. They make me happy!
And … of course my fave – pomegranates. Couldn’t get through the winter without them!
red quinoa + chickpea crunch!
1 cup dry red quinoa
1.5 – 2 cups veggie broth [or any broth]
1 red pepper
1 yellow pepper
1 can organic chickpeas
1/2 cup slivered almonds
1 cup of pomegranate arils
2 tbsp extra virgin olive oil
Black pepper, freshly ground
Celtic sea salt

Rinse the quinoa thoroughly in a fine mesh strainer [don’t skip this step!] and drain. Place quinoa in a small saucepan with 1.5 cups veggie broth. [The standard ratio is 2:1, 1 cup quinoa to 2 cups liquid, but I prefer less liquid. You can always add more during cooking.]
Bring to a boil, then cover and simmer over low heat. Simmer for 15 minutes or until all the broth is absorbed. You will see a little white ring surface on the edges of the quinoa when it’s cooked. Remove from heat and let sit for 5 minutes. Fluff with a fork, transfer to large mixing bowl and set aside to cool.
Dice the red and yellow peppers and set aside. Open the can of chickpeas, rinse and drain, and set aside.
Add the slivered almonds to a hot skillet and pan-toast them over high heat until golden brown, about 6-8 minutes. Stir them often, they will burn.
Once the quinoa has cooled in the bowl, add the peppers, chickpeas, almonds and pomegranates and stir. Then add the olive oil, black pepper, cumin, paprika, and salt to taste. Stir it all up and Enjoy!
